Cameron Douglas, Master Sommelier: Complex and richly textured bouquet. Aromas of toasty autolysis, apple, white peach and strawberry. A chalk and seashell scent adds mineral and intrigue. Weighty, crisp and fruity with flavours of white fleshed tree and stone fruits, pith and citrus peel moments. The mousse is fine and precise carrying flavour as well as a silken texture, a seashell note returns as the mousse dies away.
