Cameron Douglas, Master Sommelier: This is a delicious, fresh and delightful champagne made with Pinot Noir, Meunier and Chardonnay suggesting aromas and flavours of strawberry and apple, spiced pear and a fine yet intense leesy quality. It is both elegant and refreshingly new and youthful. As the wine touches the palate the flavours of lees and strawberry arrive first then pear and apple with some old grapfruit and white spice layers. There’s a distinctive chalky mineral quality and vibrant core of energy and youthfulness. The mousse is refreshing and moderately fine with a slightly salty note and delivers the flavours and acidity with ease. Balanced and well made with a lengthy aperitif finish. Candice Chow, Raymond Chan Wine Reviews: Bright, pale straw yellow with some depth, even colour throughout. Consistent and fine bead. The nose is softly full, featuring creamy autolysis, bruised apple, citrus fruit and peels and a toasty underlay. Medium-full bodied, the palate filled with rich aromas of toast, creamy custard, lemon balm, lemon peels, baked apple unfold with a hint of oyster shell minerals. The palate is refined with chalky oyster shell minerals, flows with great energy and vibrant acidity. The toasty richness and creaminess compliments each other and lingers to linearity.
